My favourite healthy treat at the moment are these frozen chocolate covered banana bites, they are a perfect sweet pick me up during the day and are quick and easy to make.
You will need:
1/2 a block of 75% dark chocolate (You can go darker or lighter if you prefer)
1 Banana
Desiccated or shredded coconut
A microwave safe bowl
A spoon
Baking paper and tray
Instructions:
1) Start by slicing the banana into bite size pieces you can go thick or thin depending on preference.
2) Chop up 1/2 your block of dark chocolate I used Whittaker's 75% chocolate as dark chocolate is better for you and I really like dark chocolate you can always use 50% if your not a big fan of dark chocolate.
3) Place your chocolate into a bowl and microwave in 20 second lots taking it out and stirring until smooth.
4) Once chocolate is smooth add in some coconut however much you like and stir in. This is the fun part you can actually add anything you like, I've tried it with chopped up cashew nuts, pistachios whatever you like really have fun with it.
5) Get a tray and line it with baking paper. Using your spoon place a slice of banana into the chocolate and cover. Once done place onto the tray and repeat until you have done the whole banana.
6) Place the tray in the freezer and leave them for about an hour maybe less until you serve. These treats keep nicely in the freezer for a few days so you can grab one or two on the go for a pickup.
